There's nothing like fresh salmon that is broiled or baked perfectly. The browning at the top, the succulent meat, and the enticing pinkish color is just too much to resist.
If this succulent fish is complemented with the perfect sauce, it will be enough to impress even the hardest of critics. This salmon sauce recipe is one that has been a favorite of many.
Cabernet Sauvignon Reduction Sauce
Things to Prepare:
• 1/2 tsp. fresh squeezed lemon juice
• 4 tbsp. olive oil
• 2/3c. of your favorite Cabernet Sauvignon
• 2/3 cup of beef stock
• 2/3 a cup of chicken stock
• 2 shallots
• 2 tbsp. of room temperature butter
• Salt & pepper to taste
Finely chop the shallots and put it in a saucepan together with the wine. Heat the mixture enough for it to boil lightly and reduce it to 2/3 the original amount. Then add the two stocks and again reduce the mixture to 1/2. When the mixture has reduced to half, add the butter. Gently stir the mixture allowing the butter to mix well with the sauce. Once fully incorporated, take off from heat and strain to a bowl and add the lemon juice for an extra kick.
Grilling salmon is also a great way of experiencing this fish. The charred taste grilling brings is an excellent match to the salmon’s delicate flavor. If properly executed, you will have a nice crusty top with succulent meat below just waiting to be devoured. Sour Cream Dill Sauce
• A teaspoon of dill
• A pinch of salt
• 3/4 cup of your favorite sour cream
• 1/8 tsp paprika
• 1 large cucumber, seeded, grated and well drained
• 2 tbs lemon juice
• A tsp of finely chopped chives
Peel cucumber and deseed then grate with a cheese grater. Put in the rest of the ingredients and mix well. Be sure all the ingredients are mixed thoroughly. Keep in the ref until ready to serve. This sauce for salmon recipes will be a sure hit.
